Rewatched the movie recently and realized that I've always taken for granted that it was Jack's hand, but when I saw it again it made more narrative sense for it to be Rose's.
Could also be Fabrizio's.

Out-of-universe trivia; the hand is actually that of James Cameron, it was his way of doing a cameo without being obvious.
I may have completely made that up out of no where.
