Smoked Salmon w/ a sunny side up egg

Would have been perfect on a fresh English muffin (as close as AmerI can will get to a crumpet).
I had to settle for putting it on some toast and letting the bread soak up the richness of the yolk to eat it as a sandwich day later. Still delicious.
